Bookdown: alphabetizing references within chapters + global table settings

I am using bookdown for maintaining a set of course notes and would like to do two things for which I have not found an answer.

  1. I have references at the end of each chapter, but they appear in the order in which they were cited in the .Rmd file, not alphabetically. The references at the end of the book are ordered alphabetically. Is there a way to alphabetize within each chapter?

  2. I use kable several times throughout the book. The default styling on the tables is to use zebra striping. Is there a way to globally set the default to have no striping?
