You should look into the log file.

It seems you may need an update.

If you are not bound to MikTex, you could also switch to TinyTex, a lightweight TexLive distrib that works well with Rmarkdown. See https://yihui.org/tinytex/

tinytex is the easiest way to get started knitting to PDF, unless you have a specific need which necessitates a full LaTeX install, you will generally have far fewer headaches.
