What kind of data is the volcana data set and how to make similar dataset?

I am trying to make maps similar to what is at this link.

Looking at the dataset used, the 'volcano' dataset which is a stock data set in rstudio.

I am trying to figure out what the values in the dataset mean, and how I get data like this for an original location.
